The Pistachio Spread That Turns Everyday Moments Into Something Special

Two nut spreads can contain the ingredients and feel like entirely different products. One is short and slightly sandy. The other is slow and smooth and coats the roof of the mouth.

Nothing separates them except particle size, which sounds like an engineering concern and is in fact the thing you notice before anything else.

Your tongue is a measuring instrument

The human tongue is remarkably good at detecting solid particles, up to a point — and the point is roughly 30 microns.

A micron is a thousandth of a millimetre. Above about 30 of them, you feel individual grains and register the texture as grainy or sandy. Below that threshold, the tongue stops resolving separate particles and reads the whole thing as a continuous, smooth mass.

This is not a matter of preference or of good and bad palates. It is closer to a limit of the equipment. Everyone's tongue quits at roughly the same place.

What this means for a jar on a shelf

It means texture is a manufacturing outcome, not a recipe outcome.

You cannot season your way to smoothness or add an ingredient that fixes grittiness. Either the particles were made small enough, or they were not. A spread that feels gritty was simply not ground for long enough — usually because grinding for long enough is expensive in time and machine hours.

It also means texture is one of the few quality claims in food that has a number behind it. Most do not.

Why grinding takes so long

Nuts do not become smooth by being cut into smaller pieces. Blades chop, which is fast and produces a paste with a floor on how fine it can get.

Getting below 30 microns requires grinding rather than cutting — crushing the solids between two hard surfaces, repeatedly, for hours. As it happens, the nut's own oil is released during this and the mixture goes from a stiff paste to a fluid cream without a drop of added oil.

There is no shortcut. A blender makes something in four minutes; it does not make this.

 

What we do

Our spread is refined on a stone granite melanger — two granite wheels rotating slowly against a granite base — for 7 to 12 hours per batch of 2 to 3 kg.

Particle size of 0–20 microns, which sits comfortably below the threshold where the tongue starts finding grains. The practical result is a spread that behaves more like a thick cream than a nut butter: it moves slowly, it holds a ribbon off a spoon, and it does not dry the mouth out.

The stones themselves matter. They wear over time, and worn stones grind less finely, so they are inspected monthly. That is a quality control activity rather than maintenance — the texture claim depends on it.

How to judge a spread yourself

You do not need equipment. Put a small amount on the roof of your mouth and press it flat with your tongue.

If you can feel distinct grains, the particle size is above roughly 30 microns. If it disappears into a single smooth film, it is below. This takes three seconds and is more reliable than anything on the label.

Do it with two different spreads side by side and the difference is obvious immediately.

Why we spend a working day on it

Because texture is the first thing anyone notices, before flavour and long before ingredients.

It is also the part of the product that cannot be faked, argued or reformulated cheaply. Twelve hours is twelve hours. It is why the company is named after the machine rather than the nut.
